ROBERT’S CINNAMON MUFFINS
Robert our 12 year old son made these delicious muffins in his Food Tech class and has now made them lots of times for us at home. We love them. They are so easy and tasty, and we thought you might like to try them for Christmas.
Makes 10 Muffins
220g self-raising flour
170g golden caster sugar
2 medium eggs
1 tsp vanilla extract
120ml whole fat milk
120ml olive oil
3 tbsp cinnamon
Add the dry ingredients into a bowl and mix until combined. Then add the wet ingredients and mix until combined then pour the mixture into a cupcake tray.
Fan 180C 21-24 minutes
Sprinkle with a dusting of icing sugar through a sieve.
